As the dogwoods bloom and the mountain air warms, we’re busy in the Hillman Beer kitchens crafting our spring menu. Just like our approach to brewing, our seasonal food offerings honor tradition while celebrating what’s fresh and local. This spring, we’ve partnered with nearby farms to bring you dishes that capture the essence of Western North Carolina’s awakening season. From tender spring greens to the first harvests of the year, our new menu items pair perfectly with our handcrafted beers. Whether you’re visiting our creekside tables in Asheville or enjoying the spacious setting in Old Fort, these fresh flavors will have you coming back for more.
What’s Fresh This Spring
Our spring menu showcases ingredients at their peak flavor. We’ve worked closely with local farmers to secure the first harvests of spring vegetables, herbs, and other seasonal treasures. You’ll find tender asparagus, peppery arugula, and fresh herbs featured throughout our new dishes.
Our kitchen team has created several standout items for this season. The Spring Harvest Salad combines locally-foraged wild greens with radishes, spring onions, and a light vinaigrette that pairs wonderfully with our crisp Kölsch. For something heartier, try our Grass-Fed Beef Burger topped with house-pickled ramps and a special spring herb aioli – it’s fantastic with our ESB.
Vegetarians will love our new Seasonal Veggie Plate featuring roasted spring vegetables, house-made falafel, and a bright herb sauce. It’s a perfect match for the Hazy Half Back IPA, with the beer’s subtle citrus notes complementing the fresh vegetables.
Seasonal Beer Pairings
Spring isn’t just about new food – we’re also introducing seasonal brews that capture the spirit of renewal. Our brewers have crafted a Spring Saison with delicate floral notes and a refreshing finish that pairs beautifully with many of our new menu items.
We’ve also brought back our popular Spring Wheat Ale, a light-bodied beer with subtle citrus hints that make it the perfect companion for warmer days on our patio. For something a bit different, keep an eye out for our limited-release Herb Garden Ale, brewed with fresh herbs grown right here in Western North Carolina.

Farm to Table: Our Local Partners
The heart of our spring menu is our relationship with local producers. This season, we’re working with Flying Cloud Farm for early spring vegetables, Hickory Nut Gap for grass-fed meats, and several other small producers within a 50-mile radius of our breweries.
These partnerships aren’t just good for the local economy – they result in fresher, more flavorful ingredients that simply taste better. When you enjoy our spring menu, you’re also supporting a network of local farmers who care as much about quality as we do.

Our spring menu launches next week at both our Asheville and Old Fort locations. Stop by to experience the season’s bounty paired with the beers you love. As always, our kitchen is open daily until 9pm, with the brewery staying open until 9pm Sunday through Tuesday and 10pm Wednesday through Saturday.
