ServSafe Manager SOP
Procedure#:HB SOP 11
Function: Management Policies
Implementation Date:101922
Policy/Purpose: Hillman Beer is committed to the training and success of our managers, especially in regards to food safety. We strive to maintain the highest levels of food safety and require every manager to obtain a ServSafe Manager certificate. For managers new to Hillman Beer the first 90 days will be considered an onboarding period and then after that manager has the second 90 days (180 days from hire) to obtain a ServSafe Manager certificate if they do not already have one. For managers that have been promoted, they will have 90 days from the date of promotion to obtain a ServSafe certificate if they do not already have one. Hillman Beer also requires that managers re-certify when their ServSafe certificate is 3 years out, in accordance with NC law.
Procedure:
- Operations Managers, General Managers, Assistant General Managers, Kitchen Managers, and Assistant Kitchen Managers are required to keep a current ServSafe Manager Certificate on file (current by NC law is within 3 years of passing the exam).
- Hillman Beer will pay for the initial training course and exam for all new managers or those that have been promoted. Hillman Beer will pay hourly team members their normal rate of pay (should not be a 6th day or day where taking the class and exam would cause weekly overtime) and salaried team members should take on a normal working day or if they are taking the class on a day they normally have off, they can substitute for another day off.
- Hillman Beer will also pay for any recertification that may be needed to include the training and exam when the team member’s current certification is about to expire. The recertification should be taken within 90 days of the current certification expiring (3 years in North Carolina, not the 5 year certification expiration date), and there should be no lapse in certification.
- The manager will be responsible for scheduling and paying for any training and exams if they do not pass the first exam, and should be done outside of their normal working schedule/hours.
- Managers that are new to Hillman Beer have a 90 day onboarding window to learn Hillman Beer policies and are expected to pass the ServSafe Manager exam in the second 90 day window (180 days from hire). Managers that have been promoted from within will have a 90 day window from promotion to become ServSafe Manager certified and be compliant with Hillman Beer management level requirements. If a manager is not successful the first time, they must reschedule an exam within the next 30 days. If they do not pass the first two times, they have to wait 60 days and schedule and pass the exam on the third attempt.
- If a manager does not successfully complete and pass ServSafe manager within the allotted time periods above they will not be able to continue employment at Hillman Beer.
- Hillman Beer will reimburse any non-manager who is interested in completing ServSafe Manager under the following conditions:
- Team Member needs to be working with Hillman Beer while taking the test. Hillman Beer will not reimburse team members who have taken the test before they started employment with us.
- Team Member needs to get permission from their General Manager beforehand.
- Team Member must provide a copy of both the receipt of purchase with date purchased AND a copy of the certification with date.
- Hillman Beer will only reimburse for the cost of the test, not for any additional paid training outside of work.
- Hillman Beer will not reimburse pay for time to take the test or any training associated with ServSafe Manager.
